HOW IS KOMBUCHA MADE?

Kombucha, including our Jun Kombucha, is made by fermenting green tea with raw honey and a symbiotic colony of bacteria and yeast (SCOBY). We use a blend of two organic green tea varieties: Sencha and Green Darjeeling.

During fermentation, the yeast in the SCOBY consumes the sugar in the honey, converting it into alcohol, which the bacteria then turns into acetic acid. As fermentation progresses, a cellulose pellicle forms on top, this is often mistakenly called “the SCOBY.”

This fermentation process transforms the flavour and fills kombucha with healthy cultures. After about 10 days, the kombucha is ready. We remove the pellicle but leave the kombucha unfiltered, and use some of the kombucha culture to make nunc, and the rest of the culture is used in the next batch.

The final product contains a trace (<0.5%) of alcohol, a bit of caffeine, and some acetic acid.

Once fermentation is complete, we lightly carbonate the kombucha and flavour it with organic botanicals.

WHERE DID JUN KOMBUCHA COME FROM?

Jun Tea, known as the champagne of kombucha, is believed to have originated in the East, where it was reportedly brewed in monasteries and consumed by monks and warriors for its health benefits - promoting well-being and a clear mind. Although this is largely a myth, Jun Tea is still brewed in Western Tibet and is well-known there, which suggests jun did originate in Tibet, passed down through generations by monks and locals, adding truth to the myths.

We believe jun tea is the "original" kombucha, as processed sugar would not have been available on the Tibetan plains centuries ago. We think the Jun SCOBY was taken out of Tibet, but due to the scarcity of honey was brewed with sugar, which over time adapted to become the standard kombucha SCOBY people know today.
